Easy Taro Recipes

Taro Hash 

Steam taro for at least 2 hours until a small bite does not make your mouth or throat itchy. 
Peel and chop 4 cups taro into small cubes about the size of playing dice 

Sauté in a pan on medium with olive oil, 

chop onion, bell peppers, garlic, leeks and

toss in with the taro.

Sauté it until the edges are a bit crispy then add salt, pepper, and any of the following spices you like (cumin, coriander, curry powder, garam masala, garlic, onion, nutritional yeast, paprika, chili flakes, cayenne) you can also put in oven to make it crispier if you want a nice little crunch. 

Mashed Taro

Steam taro for at least 2 hours until a small bite does not make your mouth or throat itchy. 
Peel and chop 4 cups taro

Sauté 1/2 onion + 1/4 C garlic cloves or to taste then add to a blender with 1 t salt, 1 t pepper, 1 cup of non dairy milk,  1/4 C olive oil, 1/4 c macadamia nuts optional, and blend until smooth. 

Put taro in a food processor or bread mixer and run until smooth, then turn to lowest speed and add in the mixture from blender. Add more salt/spices to taste. 

top with chives/green onions/parsley optional.

Taro Tortillas

Steam taro for at least 2 hours until a small bite does not make your mouth or throat itchy. 
Peel and chop 4 cups taro

While still warm, run in a bread mixer until smooth with 1 t salt, 1 t pepper, and any other spices you like. 

it could be pretty sticky depending on variety of taro and how much if any water it was sitting in when cooking.  If you can oil your hands and it not stick, its good to go, you can let it cool a b it and it will become less sticky also. 
Or you can add in a little flour to get it to the texture of masa. 

place a plastic bag cut to fit your tortilla press on your press and add oil then put in a little ball of the dough and press then cook on a pan or griddle.  Dont stack the cooked tortillas until they're cool so they dont stick to each other.

Taro-nut holes

(cinnamon)

Steam taro for at least 2 hours until a small bite does not make your mouth or throat itchy. 
Peel and chop 2 cups taro

While still warm, run in a food processor with  3/4 c sugar or coconut sugar, 1 t salt,

1 t baking powder, 2 t cinnamon, 1 t ginger until smooth, then add 

2.5 C oat flour or other gluten free flour and run until it forms a dough ball.

make into little balls and fry in boiling coconut oil for ~1 minute

toss in 1/3 C sugar/coconut sugar + 1 T cinnamon.

Steam taro for at least 2 hours until a small bite does not make your mouth or throat itchy. 
Peel and chop 2 cups taro

While still warm, run in a food processor with  1 1/4 c sugar or coconut sugar, 1 t salt,

1 t baking powder until smooth.

Then add 1.5 C cacao powder and 1.5 oat flour or other gluten free flour and run until it forms a dough ball.

make into little balls and fry in boiling coconut oil for ~1 minute

then coat in glaze - 1/3 C powdered sugar mixed with 1 T dairy free milk
